1 Stick (1/2 cup) Butter
1/2 Cup All-purpose, unbleached Flour
6 Large Eggs
1 Cup Milk
1 Tsp. Baking Powder
1 Tsp. Sugar
1/2 Tsp. Salt
1 Tsp. Cream of Tartar
1 lb. Cabot’s Vintage White Cheddar Cheese
3oz. (6Tabs.) Cream Cheese, softened
1 Cup Ricotta Cheese
1 Tbs. Chopped Green Onions

Preheat oven to 350 degrees. Melt Butter in saucepan. Add flour and cook until smooth. In large Bowl beat eggs, milk, baking powder, salt, sugar, and cream of tartar. Stir in cheeses, green onions, and butter mixture until blended. Pour into two well-greased, 8×10 inch ceramic baking dishes. Bake uncovered 30 minutes.
