Greetings!

Spring is almost here and at Candlebay Inn, formerly Captain Briggs House Bed and Breakfast, we’re welcoming it with open arms.

So much has happened since you last heard from us. This was our first Maine winter and we received record-breaking snowfall. During the quiet times we’ve been focusing on repainting the rooms, refreshing the linens, sprucing up the Inn and trying to keep up with all the shoveling!

We’ve kept the inn pet and family-friendly and are planning some great things for this summer.

We are excited to launch a new website (www.CandlebayMaine.com) and a new Facebook page (www.facebook.com/candlebayinn). Bev and Chuck are dearly missed and definitely a hard act to follow but we hope to see you soon on your next trip to Freeport, Maine.

A Specialty of the House

Blueberry Belgian Waffles

 

Belgian Waffles at Candlebay Inn2 cups all-purpose flour
1 tbsp sugar
1 tbsp baking powder
1/4 tsp salt
1 3/4 cups milk
2 eggs
2 tbsp vegetable oil
1/2 cup blueberries

Combine flour, sugar, baking powder, and salt in large bowl. Whisk milk, eggs, and oil in medium bowl.  Whisk milk mixture into dry ingredients just until dry ingredients are thoroughly moistened. Gently fold in blueberries.

Preheat belgian waffle make. Pour 1 cup batter onto the center of the bottom grid. Close top and flip waffle maker (depending on type of waffle maker). Bake until golden, about 4 minutes.

For Homemade Whipped Cream:

1 1/2 cups heavy cream
2 tbsp confectioners’ sugar

Combine heavy cream and confectioners’ sugar. Beat with the whisk attachment of your stand or hand mixer until whipped cream forms.

Top waffles with whipped cream, blueberries, and/or syrup.

Featured guest MollyMolly recently spent four nights with us. She is being raised to become a service dog for children with autism. Molly will be going to her forever home soon to be a very special companion to a very lucky little boy!

The popular Freeport First Fridays concert series is back at the Freeport Community Center, and it begins Friday, April 4! Feathers Over Freeport

Feathers Over Freeport at Wolfe’s Neck Woods State Park features bird walks for adults & children, educational displays, an osprey watch, birding fun & games, an ice cream feast, spring plant walk, live birds presentation and learning how to track Maine wildlife. Event is April 26 from 8 a.m. to 4 p.m.
