Ingredients:

 ½ cup butter
 ½ cup all-purpose, unbleached flour
 6 large eggs
 1 cup milk
 1 tsp baking powder
 1 tsp sugar
 ½ tsp salt
 1 tsp cream of tartar
 1 lb Cabot’s Vintage White Cheddar Cheese
 3 oz cream cheese, softened
 1 cup ricotta cheese
 1 tbsp chopped green onions

Directions:

Preheat oven to 350 degrees. Melt Butter in saucepan. Add flour and cook until smooth. In large Bowl beat eggs, milk, baking powder, salt, sugar, and cream of tartar. Stir in cheeses, green onions, and butter mixture until blended. Pour into two well-greased, 8x10 inch ceramic baking dishes. Bake uncovered 30 minutes.
